Here’s a recipe that our customer Shelly gave us Saturday.
Sweet Corn Soup
8 ears sweet corn
2 gallons water
1⁄4 pound butter
1 medium yellow onion, diced
5 cloves garlic, sliced
Salt and pepper to taste
1. Cut kernels from ears of corn. Reserve cobs.
2. Snap cobs in half and put in large pot. Cover cobs with water and bring to boil. Reduce heat and simmer for 2 hours. Strain through sieve. This can be done days ahead of time.
3. In large pot, melt butter and heat onion over low to medium heat. When onions are soft and translucent, add garlic. Continue to heat for 5 minutes; add corn kernels, continue to saute for an additional 7-8 minutes, being careful not to color the vegetables too much.
4. Add 5 quarts corn stock (made in step 2). Simmer 20 minutes.
