    Opening Day at the Fairgrounds was great! We had a few sprinkles of rain but otherwise, the weather remained mild. Lots of vendors, with plenty of fresh Spring goodies available, lined the market on Saturday. Many of us sold out early.

    Q: Many years ago I was dining in a restaurant in Chicago's Chinatown. I ordered pressed duck. It was served in a deep fried form about 6 inches in length, 4 inches wide and about an inch or so thick. The vegetables were pressed together with the duck and was served with a sauce. I don't know if it is Cantonese, Mandarin, etc. Chinese cookbooks contain no such recipe. For many years since that occasion I have dined in Chinese restaurants around the country and have never been able to find pressed duck prepared in this manner. I am seeking your help in finding a Chicago area restaurant that serves pressed duck in this manner or a recipe so that I may prepare it at home.

With a newly modern approach to meat making it possible to find cured meats that are well made, and even healthy, charcuterie has become increasingly popular. Look for artisanal charcuterie that uses high&ndash;quality and natural ingredients, preferably organic, and hormone&ndash;free meats with fine seasonings, salts and herbs. There's much to choose from: cured meats, p&acirc;t&eacute;s, terrines and gourmet sausages. Alberto Sollis, of The Rogers Collection, helped us narrow down our choices to Spanish charcuterie and cheese. For charcuterie, he suggests Jam&oacute;n Ib&eacute;rico, also called pata negra, a cured ham produced mostly in Spain; Serrano Ham, or mountain ham, is a dry&ndash;cured Spanish pork generally served raw sliced thinly or diced; and Cured Pork Tenderloin, from one of the leanest meats available.
