    Crimini mushrooms, which are also called Roman, brown or Italian mushrooms, used to be the only mushroom grown in the United States. Growers abandoned them in favor of a faster-growing cousin, the common white button mushroom. However, an increase in consumer interest in mushrooms has given the cream-colored crimini another chance. The caps are cocoa-colored and have chocolate-brown gills. The texture is firmer and the flavor is much more intense and satisfying. Select plump, solid mushrooms with no sign of dampness or shriveling. Check the stems for any signs of mold.
