  13. All about ham

Curing meat is a very old tradition that was done for years out of necessity. Before people had refrigerators, meat would spoil quickly if it wasn’t preserved in some way. After animals, especially hogs, were slaughtered, their meat was cured with salt, sugar and spices. Doing this kept the meat from spoiling for much longer amounts of time — sometimes a year or more.

  15. From the Farm: Spring is just around the corner

It has been a windy but somewhat warmer weekend. The last of the snow has melted off for now. Supposed to be even warmer later this week. Everyone will be wanting to be outside including me. That first taste of warmer temperatures, after the cold, snowy days of winter, draws me to the herb and flower beds to check for the first brave little souls to push through the soil. It is a little early yet, but soon chives and other hardy herbs will peek out as well as crocus. Daffodils, tulips and hyacinths will soon follow. Spring is just around the corner.

  21. Street crews across Jessamine County temporarily out of salt

Punxsutawney Phil may have predicted a short winter and an early spring when he failed to see his shadow a couple of weeks ago, but if any more snow falls on Jessamine County between now and then, even one more week of winter could be too many. And that’s because just about everyone is out of road salt. The city crews for Wilmore and Nicholasville ran out of salt Wednesday night, and the county crew was scraping the bottom of the barrel after Thursday morning’s routes.
